How to make sweet and sour sauce
The sauce is a combination of sugar and wine vinegar and, although it is typical of Chinese cuisine we can find it as the main ingredient in the cuisine of many Western countries.
It usually combines in a sensational way with all kinds of meats, especially pork (sure you have eaten in more than one occasion bittersweet pork). It also enriches battered preparations, tempuras, fish and boiled vegetable dishes, being very typical to throw it on the spring roll that makes it highlight its original flavor and gives it an exotic touch.
Evolution of the sweet and sour sauce
Of the history of the little bittersweet sauce and we know nothing. The oldest record you have is from Roman times when, a similar base sauce, was commonly used among the members of the High society. During the Middle Ages the traces of this sauce are lost and little is known of its use or even knowledge.
Already in modern times salsa has a strong presence in many regions of the West, though more than anything like an exotic accompaniment, a touch of distant lands in our dishes. In the twentieth century, especially in the end, the bittersweet sauce became popular, easily incorporated into local kitchens.

How to make sweet and sour sauce – ingredients
These ingredients are to prepare a dip, if you want to do more you simply double the quantities:
- 6 tablespoons of sugar
- 2 tablespoons soy sauce
- 3 tablespoons ketchup
- 3 tablespoons vinegar
- 2 tablespoons white wine
- 1 glass of beef broth
- 1 tablespoon cornstarch/cornmeal
- 1 small shallot
- A pinch of salt
How to make sweet and sour sauce – step by step
1.-In a saucepan put to caramelize the sugar, covered with vinegar and wine. It also adds the finely chopped shallot. Leave to medium heat until you notice a considerable reduction in the liquid and stir so that it will not stick.
2.-Reserve some broth separately to dissolve the cornstarch or other cornmeal.
3.-Add the soy sauce, ketchup, broth and cornstarch well dissolved in the broth. Mix well and season to taste.
4.-Stir and bring to the boil.
5.-Put in a sauce and serve once lukewarm or, better yet (at least I think), and cold.
