It may be striking to use the pineapple with the meat but, if you look, the pineapple has already become a highly demanded ingredient in pizzas, for example, and the combination is amazing. In the case of the chicken, gives a very good juiciness and its flavor is surprising, children often love.
Chicken with Pineapple: ingredients
- 1 chicken
- 250 gr Pineapple in syrup
- 1 shallot or French onion
- Virgin Olive oil
- White wine (200 ml)
- 150 ml chicken broth
- 100 ml crushed natural tomato
- Black pepper
Chicken with Pineapple: preparation
Clean the chicken, season it inside and out with salt, pepper and curry. Add some pineapple juice and white wine inside and outside the chicken.
Fill with two slices of pineapple and close the opening with a toothpick.
In a refractory dish, place the chicken along with the tomatoes, the French onion (or the leek) and 3 slices of pineapple in small pieces. Add a splash of oil, pineapple juice and white wine. (If you want to make a more consistent dish you can add potatoes in the oven reogadas with oil and a little pineapple juice).
It is put in the oven 200 º for about 40 minutes and when it takes 20 minutes it turns over the chicken. If you see it dry you can add some broth with pineapple juice.
Once the time has passed and the chicken is done, it will be the time to serve and enjoy.
