The Waldorf salad is a classic among salads. The story of this salad seems to go back to 1893, when a chef at the Waldorf Hotel, who gave his name to the salad, invented it. Although all origins seem to be debatable, the ingredients of the Waldorf salad have been maintained during the decades given their wide acceptance and their very particular taste.
In a salad with a bittersweet but delicious flavor, which combines apples with raisins as well as a little vegetable (which we tell you then has celery), along with a little cream and a little mayonnaise.
Let’s see how to prepare a salad which on the other hand is perfect for accompanying other recipes and summer dishes.
- 2 tablespoons cream
- 2 tablespoons mayonnaise
- Brown sugar in needed quantity
- Sea salt in necessary quantity
- The juice of half a lemon
- Raisins in necessary quantity
- 3 Red apples in cubes (no need to peel them)
- 2 green Apples in cubes (no need to peel them)
- 2 cups diced celery
- 2 gr chopped walnuts (not very thin)
First we will prepare the dressing, for that we mix the cream, the mayonnaise, the sugar, the salt and the juice of half a lemon. In general terms it is a salad that has a sweet touch or as I mentioned, a little bittersweet.
The ingredients already cut, apples, celery and walnuts are mixed well. Add the dressing and mix well, it must be very well impregnated.
Refrigerate for at least an hour before serving.
It is ideal to serve it on a base of fresh lettuce leaves and decorate it with raisins.
Waldorf Salad with Chicken
The way to prepare the Waldorf salad that we have seen now, is one of the most classic known, but this salad as happens with almost all, you can throw other ingredients that generate new versions from the original.
Let’s see now how we can make a Waldorf salad but with chicken and we can prepare in less than 15 minutes.
- 1 medium apple, not peeled, cut
- Juice of 1 lemon (about 2 tablespoons)
- 2 cups cooked chicken diced or diced
- 1 cup of grapes without red seed, halved
- 1 celery stalk, finely chopped
- 1/4 Cup of gold raisins
- 1/2 Cup toasted, chopped walnuts
for sauce or dressing
- 3/4 Cup yogurt (preferably non-fatty Greek)
- 1/4 Cup mayonnaise
- Orange juice (approximately 1/4 cup)
- Kosher salt 1/4 teaspoon
Place the chopped apple with the lemon juice in a large bowl. Add the chicken, grapes, celery, raisins and walnuts, and gently mix.
In a small bowl, add yogurt, mayonnaise, orange juice and salt. It mixes everything and lets refrigerate to serve cold.
