Today we are going to tell you how to prepare a delicious onion salad. Don’t Panic! The intense flavor of the onion will be enriched by a fresh herb marinade and a sweet air when cooking the grilled onions.
- 1.5 kg of onions (you can use red onions, to give a touch of color to this salad, but any other sweet onion works just as well).
- 2 tablespoons olive oil
- Salt to taste
- 1 tablespoon mustard
- 2 tablespoons chopped shallots
- 1 tablespoon fresh thyme
- 1 dente of Garlic well treaded
- 3 tablespoons white wine
- 1/2 Cup olive oil
Onion Salad Preparation-step by step
Peel the onions and cut them from the vertical root, trying to form segments that hold together by a piece of root (but will disarm).
Cover the onions with a little oil and salt on top.
Prepare the barbecue or the grill over a strong fire and pour the onion wedges over it until it is golden brown on both sides (better if the grill marks are left). If you do not have a grill you can brown the onions in a frying pan over a strong fire on both sides and then lower the fire and continue cooking covered. If you are cooked with the grill, once golden on both sides, lower the heat or remove some charcoal, and continue cooking for 15 minutes or until soft in the center and cooked.
While the onions are cooked we can prepare the marinade. For this we will mix the mustard with the garlic tread, thyme, chopped shallots and wine. Use a processor to form a cream. Then add the olive oil while we at low speed. A homogeneous cream should be left.
Once the onions are cooked, remove them from the grill and check them to discard the tips of the roots that are very hard or any piece of skin very cooked by the grill.
Mix the onions with the marinade and allow to marinate for at least 30 minutes.
It can be stored for several days in the refrigerator and the flavor becomes more intense over time.
