The Caesar salad is a fresh, easy-to-prepare dish that contains great tasting ingredients that are complemented with an exquisite dressing. It is an ideal dish to eat on hot summer days, but it also serves as a perfect starter for any other dish.
There are different ways to prepare a Caesar salad so we have selected the most representative.
Vegetarian Caesar Salad
This famous salad can also be enjoyed by vegetarians in a version that does not lose its special touch and the freshness of its flavor. A good reason to become a vegetarian!
- 2 tablespoons mayonnaise
- 1 tablespoon vodka
- 1 tablespoon lime juice
- 2 drops of Tabasco
- 150 ml light olive oil
- 1 tablespoon chopped fresh mint
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon cumin powder
- 1/4 teaspoon chili powder
- 1 small garlic clove, tread
- 2 slices of bread of the previous day
- 2 lettuces
- 115 gr of Emmental cheese or similar
Preheat oven to 190 degrees. Mix the mayonnaise with the vodka, lime juice, and Tabasco, add 85 ml of the oil until it is a thick and creamy preparation. Add half the herbs and book.
Mix the rest of the oil with the rest of the herbs and garlic. Spread on both sides of the bread slices. Place in an oven pan and toast for 10 or 12 minutes until crispy and golden on both sides. Allow to cool and cut into cubes.
This salad should be prepared just before serving.
Wash the lettuce well, remove the outer leaves and dry well. Put a large bowl like lining the bottom. Add the pieces of toasted bread and the cheese in cubes. Add the preparation we did at the beginning. Throw it evenly until everything is covered.

Vegetarian Caesar Salad with soy
Soy is one of the most commonly used products in the vegetarian diet because it is very easy to cook and has a soft flavor, so you get along well with it easily – unlike tofu.
To prepare this salad, you can use the texturized soy and make some small burgers at home with the ingredients that you like, or you can buy soy fillets that are already prepared (on large supermarket surfaces, herbalists and dietetics, etc.).

- Soy fillets
- 1 egg
- Parmesan cheese
- 1 Natural yogurt
- 1-2 teaspoon old mustard
- A splash of olive oil

The first step is to put the soy fillets in soak until they are well hydrated (you can look at the box to see how long your specific brand recommends). Once they are well hydrated, they must be drained so that they lose all the excess water.
Beat an egg and place some breadcrumbs on another plate. Pass each fillet through the beaten egg and then the breadcrumbs, looking that each one is well breaded. You have the option to add a little bit of chopped garlic and parsley to the grated bread to make the fillets tastier.
When you have them empanadas, you put them in a frying pan with a little oil and you have to fry it on low heat so that they do well inside. When removing them, put them on a plate covered with kitchen paper to absorb the remaining fat.

Tofu is a key ingredient in the vegetarian diet for all the nutrients it brings but you have to catch the point of flavor, you have to get used to it because it often causes a little bit of rejection at first but everything must be used!

You have two options, or cut the tofu in thick slices or chunks, depends on the presentation you want to make it more esthetic. If you are going to present it in cubes is better the second option as well will be doradito on all sides, although it will take more work in the oven.
